An Easy Delicious Green Smoothie Kids Love

Always on the lookout for a tasty way to drink greens, I have tried quite a few with kale and chard and been disappointed. That’s always a bummer because I’d feel too guilty to waste the yummy fruits I put in the botched juice, so I end up pinching my nose and drinking the bitter fluids down.  But today, at my beautiful daughter’s suggestion I added mint and lemon to chard.  I threw in cucumber for a crisp taste and pear for sweetness.  I whipped it up in the Vita-Mix, poured it through a fine mesh sieve into a pitcher of ice and serve it up. To my surprise it was delicious.  My daughter (13yrs and fickle) as well as my 9 month old son loved it.  Success.

Juice of one lemon
one small cucumber
10 to 12 mint leaves
3 large chard leaves
2 pears
1 & 3/4 cup water

Toss all the ingredients into the high speed blender and blend until smooth.  If you like it thick serve it over ice to get more of the fiber.  If you like it smooth pour it through a fine mesh sieve before you serve it over ice.
