Delicious Raw Cheese from Happy Cows in an Organic Pasture
Thanks to the lovely Lucy Anne of Willamette Valley Cheese Company I will have the luxury of rich fabulous, craft cheeses (note there is no K in craft) while on my raw foods cleanse starting October 3rd. The three things that I consider dietary splurges are cheese, chocolate and bacon. David Wolfe has the chocolate covered with organic raw cacao beans that make delicious raw chocolate treats. I’ve crafted an eggplant bacon that even my bacetarian (a vegetarian who makes a meat exception only for bacon) daughter loves. That left cheese. Nut cheeses are fabulous but there is something about real, quality cheese that just turns a plate of grapes into a happy hour. After meeting Lucy Anne at farmer’s market, I’ve found my raw cheese treat.
She had three raw varieties available the day I met her at market, Farmstead Raw Milk Cheddar, a raw Havarti and a Borenkass which is a raw milk aged Gouda. All were fabulous, my favorite was the Borenkaas. Together with a plate of figs and champagne grapes it was a true delight. Looks like I get to splurge even while on my cleanse!
