Ginger Pomegranate Juice

I cannot tell a lie, I like a good latte in the morning. I know it’s not a healthy choice, but it’s warm, delicious and kicks starts my day. I get my lattes to the healthiest point I can by starting with organic, free trade beans, sweetening with agave or maple and using coconut milk as my creamer. But I still reserve coffee as an occasional treat. Here’s a caffien free ass-kicker that wakes me up. You could substitute other juices, my daughter loves to use pineapple juice. I would encourage you to stick with a juice high in antioxidants and low in sugar.Per person:

2 cups pomegranate juice
1 1/2- 2 inch square piece of fresh ginger root (peeled)

Blend on high in the Vita Mix for 45 seconds and pour through a fine strainer. If you’re drinking this in the AM try it without ice, just chilled juice. Give it a whirl as a mocktail by adding ice, a sprig of mint and serving it up in a chilled martini glass. When I am entertaining and passing on booze, this is my drink of choice.
