Not Yo’ Standard Nachos

Last night the fam and I had a little movie night planned so I decided to make nacho’s. Of course I have been dabbling in raw cooking lately so I refused to do any nasty real nacho cheese. Instead I did a thinned version of a nut cheese and it was a hit, even with my 11 year old. I didn’t have any dehydrated corn chips ready so I went with organic white corn chips from Trader Joe’s. Each of us had a side or chips next to a little “salad” of black beans, tomatoes, cilantro, diced spinach, chopped green onion, corn salsa, plenty of avocado and lime. We each had a half avocado skin full of the Not-cho cheese. Here’s the scoop on how I made it. I altered this recipe from Ani’s Raw Kitchen by Smart Monkey Foods founder, Ani Phyo.

2 cups macademia nuts
5 tablespoons lemon
1 1/2 tablespoons tumeric
1 tablespoon nama shoyu
1 cup water
1-2 teaspoons cayenne pepper

Put the nuts, lemon, shoyu, tumeric and cayenne in to the Vita-Mix (blender) with half the water. Add the rest of the water as needed to get to the consistency you desire. It will get warm in the blender so serve immediately. Yum! Junk food without the junk.
