Got Nut Milk?
No?  And you also don’t have the soaked nuts to whip up a batch? No worries! Don’t reach for that boxed almond milk just yet!  If you have nut butter, such as raw almond butter or cashew butter you can have nut milk in a jiff!  Don’t get any crazy ideas about using that hydrogenated, genetically modified mess of a peanut butter though! You need a quality raw nut butter.  Here is your fastest path to nut milk that saves time, hassle and mess.

Super Quick Raw Food recipe for Nut Milk
Ingredients
2 tablespoons almond or cashew butter
2-4 pitted dates, or two tablespoons maple or agave
1 teaspoon vanilla
2 1/2  to 5 cups water ( for skim-style milk add 5 cups, for a creamier-full bodied milk use 2 1/2 cups)

Blend all ingredients in the Vita-Mix on high for a full minute and enjoy.  No need to strain the milk becasue there is not enough sediment to bother.

Note that soaked, strained milk is smoother and a little creamier, but this is a great raw food short cut when you go to whip up a breakfast bowl or smoothie and don’t have any nut milk handy.  It also does away with having to store the almond pulp for future use. By the way if you are looking for uses for almond pulp, check out the lemon poppy seed bread post.
