Raw Cacao Pudding Recipe

Raw Cacao Pudding is one of the fastest and easiest desserts you will ever make. The best part is that you would NEVER know that by tasting it.  If you, like me, love pudding, you know that is it a labor of love to tend to the pudding so that it doesn’t scald.  SInce this is raw food, there is no scalding to worry about.  There is also no dairy, no thickeners and certainly NONE of the processed crap found in the store bought pudding mixes or pudding cups.

Pardon the plating in the photo above, which looks a little too much like poo.  I wanted you to see the texture of the pudding, so instead of hiding the pudding in a pretty parfait, I simply plopped some on a plate an topped it with bananas, sliced almonds and a dash of cinnamon. You can see that there is no GREEN, despite the fact that the base of this pudding is avocado.

Yes, this recipe still has fats and sugars, but what an improvement over the ingredients in the store bought variety. You get the superfood power of raw cacao, which has more antioxidants than green tea.  The beneficial fats from the avocado and coconut oil.  And the natural sweeteners are much easier on the body.  Enjoy!

Raw Food Recipe for Cacao Pudding

Ingredients:
2 ripe avocados
¼ cup raw cacao powder (my favorite raw cacao powder is from Bright Earth Foods)
½ to ¾ cup maple syrup, agave?, or natural sweetener of y our choice
2 tablespoons coconut oil
seeds from 1 vanilla pod or 1 tablespoon vanilla
dash sea salt
try adding a dash of cayenne and cinnamon for a little kick

Put all ingredients in the Vita-Mix and blend .   Stop to scrape down sides.  Blend again until warm.  Serve warm.

Note that you will need a high speed blender like a Vita-Mix, a regular blender will not create the pudding consistency.
