Pretty In Pink Salad

John Hughes would have approved of this gorgeous salad that gets its brilliant color from phytonutrient-rich beets, carrots pistachios and cherries. The beets cause the jicama to take on a lovely pink color, thus the cheesy raw food recipe name.  Regardless of the silly name, try this dish. It works well as a typical salad or as a beautiful filling for wraps.  If you want to add a little spice to the salad, watermelon radish gives it a little kick and extra visual flare.

1/4 cup cherries, halved and pitted
1/4 cup jicama, julienne cut
1/4 cup beet, julienne cut
1/4 cup carrots, julienne cut
1 tablespoon chives, chopped (reserve some for garnish if desired)
1-2 tablespoons raw pistachios, roughly chopped
1-2 tablespoons Ginger Lime Dressing

Toss all ingredients except pistachios well. Top with pistachios and serve immediately.
