A drink this delicious and versatile must have a vegan, raw option for those of us who want something a LOT healthier than the pre-made chai concentrates that are full of processed sugar and chemical laden non-dairy creamers. I’m committed to a high raw diet and enjoying Chai. Here is what I’ve come up with.
Raw Chai Concentrate
Ingredients:
1 to 1 1/2 tablespoons fresh grated ginger (use a micro plane zester)
1/2 teaspoon fresh ground black pepper
1 teaspoon cinnamon
1/2 teaspoon clove
1 1/2 teaspoon vanilla or the seeds from 2 vanilla bean pods
1/2 cup raw honey

Warm two cups of fresh almond milk on the stove over low heat stirring frequently until it feels as warm as a hot tub. Add in one tablespoon of the Chai concentrate (or more if you want a stronger tea). Stir well to combine and serve warm.
