avocado-cilantro-hummusAvocado & Cilantro Hummus

A fresh twist on an old favorite, this hummus goes as well with tortilla chips as it does with lavash or pita bread.  This is a five minute snack that can be made with many flavor twists.

1 15 ounce can of garbanzo beans
or one cup beans soaked over night and simmered until tender
1 avocado, peeled and pit removed
½ cup cilantro leaves
5 tablespoons fresh squeezed lemon juice
3 tablespoons tahini
3 tablespoons olive oil
½ teaspoon sea salt

Drain the beans. In a Vita-Mix combine all ingredients until smooth. Taste and adjust salt as needed. Allow flavors to marry. Serve at room temp or chilled.
