If you haven’t been to Rubicon Deli– you might very well be the only one who hasn’t treated themselves to what San Diego Magazine calls San Diego’s BEST Sandwich.
Praise for Rubicon has been rolling in…

- “Once you’ve eaten a Rubicon sandwich, there is no going back!”, says San Diego’s City Beat Magazine.
But for me the reason I went was because one of my foodie friends said it was, and I quote, “THE BOMB”.
I was in love from day one and not for the reasons most people will love this place; the fresh baked bread, the piled on meats and cheeses, and the kick-ass mustard and sauces. All those things are great, but for the way I advocate eating- not so helpful unless I’m enjoying a dietary splurge.
Truth be told the love started with their general manager, Alden who is beyond amazing. He made my husband’s day by suggesting the Dom Pastram on blue cheese bread and informed me that they would prepare any sandwich “scooped” or “naked”. Scooped means they take out the majority of the fluffy part of the bread, reducing carbs & calories but leaving just enough of their indulgent bread. Naked means no bread at all, served instead on a pile of fresh greens. Just my style.
A big win! Any place we can eat out that gets hubby what he wants (since I don’t make it at home) and I can have a healthy, leafy green option is a winner of a restaurant for us.
So, imagine my delight when the Rubicon owners got wind of my menu consulting for healthy foods and reached out to have me design new line of salads to be served along side their award winning sandos!
