Spinach Burgers: Easy, Veggie Patties You Can Make at Home

If Sydney will eat them, they must be good. My beautiful niece is the true test of whether a dish is palatable for little ones, and these are a favorite of hers. Make a batch on Sunday and keep them in the fridge or freezer for a quick meal anytime.

16 ounces frozen spinach, thawed and pressed between two plates to
remove water
1/2  (less if you’re not big on onion!) cup finely chopped sweet onion
3 cloves garlic, minced
1 cup Quatro Fromaggio or fresh grated parmesan
¼ to ½ cup bread crumbs
2 tablespoons oatmeal pulsed to a flour
sea salt and pepper
6 buns
2 avocados, peeled and sliced
2 tomatoes, sliced
6 leaves green lettuce

In a large mixing bowl combine spinach, onion, garlic, cheese, ½ tsp each sea salt and pepper. Mix well, then add the ¼ cup bread crumbs and oatmeal. Stir to combine, then mix with hands. If the mixture is too moist to form patties add more bread crumbs. Form patties using one sixth of the batch for each. Separating patties with wax paper or parchment, cover and let flavors meld, then broil for 10 minutes on each side.  Serve on buns with lettuce, avocado and your favorite
condiments.
