Spinach Salad in Maple Curry Dressing
This spinach salad is made sweet and flavorful by the Maple Curry Dressing. Toss what you will eat right away in the dressing and keep the rest separate to enjoy later.
6 to 8 handfuls baby spinach, rinsed, drained and spun dry
½ cup dried cranberries
1/3 cup diced green onions, greens only
½ cup cashews
1 cup diced celery
1 batch Maple Curry Dressing
Toss all ingredients in a large mixing bowl with half the dressing. Add more dressing as needed, toss and serve.
Maple Curry Dressing
2 tablespoons olive oil
2 tablespoons maple syrup
1 tablespoon Vegenaise
1 ½ tablespoons curry powder
½ teaspoon granulated garlic
¼ teaspoon salt
¼ teaspoon pepper
1 teaspoon green onion, whites only,finely diced (save greens for the salad)
Mix all ingredients well. Taste and adjust salt,pepper and maple to desired flavor. Toss with your favorite greens or use for Curry Cous Cous (page 85 in The Delicious Revolution Cookbook).
